Today have got you guys my go-to recipe for eggless butter cookies/Nankhatai recipe. This recipe has never disappointed me.These are a perfect match with some tea/coffee. Do try out these scrumptious and flavourful biscuits.

  1. Roast Cashews and keep it aside.
  2. Add sugar, butter at room temperature to a bowl. Mix the ingredients using a spoon.
  3. Mix all purpose flour, baking powder and cardamom powder together. Then add this dry ingredients mixture to the butter mixture and knead it into a dough.
  4. Cover it with a cling wrap and leave it aside for 30 min.
  5. Preheat the oven to 300F.
  6. Now make small balls and place it on a baking sheet and bake for 20-22 minutes in the pre-heated oven.
  7. Once they are golden brown remove it from the oven and allow it to cool down.
  8. Tadaaa! Enjoy these scrumptious eggless cookies/Nankhatai.
